Oatmeal Banana Chocolate Chip Muffins (gluten free and STILL delicious)

At long last I had the chance to make these tasty muffins that I have been craving!  And I have to say that it's the best batch yet.  Maybe because I was concentrating on what I was doing instead of watching a BBC mystery series at the same time, ahem :) 



The great thing about these muffins?  If you are avoiding gluten, then these are for you!  I make these using oat flour that I have made myself (sounds more impressive than it is...check out my super easy tutorial here!) 

Don't let the fact that these are GF deter you; I'm a gluten lover/consumer and stumbled upon these years ago and make them by choice, because I'm also an oat lover and these are delicious, oat-y goodness!  

3-1/2 cups Oat Flour
2/3 cup Sugar (raw, pure cane sugar makes these super tasty!)
4 teaspoons baking powder
1/2 teaspoon Salt
3 Eggs
1-1/2 cups Milk 
1/2 cup oil
2 cups Oats (quick or regular)
2 Ripe Bananas, mashed
Chocolate Chips, to taste

In a mixing bowl combine oat flour, sugar, baking powder, and salt.  In a separate bowl combine eggs, milk, and oil.  Add wet ingredients to dry ingredients and mix together.   Add the two bananas and mash into batter.  Add chocolate chips, as desired. I usually add a handful.  

Bake at 400 degrees for 20 minutes.  Makes 24.

Free Printable: Mother's Day Questionnaire

Do you teach Nursery or the Sunbeam class at church?  I have a perfect activity/gift for you do with them.  I'm so excited to offer this free printable to you! 

The teachers ask the questions and fill in the children's answers.  It does take a few minutes but it is sure to be a treasure!   Sometimes they can be pretty funny--I think my daughter said I was 10 feet tall and liked to clean the house and cook :)

Oat Flour Tutorial

I don’t have a lot of kitchen tricks up my sleeve but this one is definitely one that I love.  

Did you know that you can make your own oat flour in a snap?

And seriously, it's so easy.  All you need are oats and a blender!  

Side Note: The Quaker Oats tin has been in my kitchen for years.  I always refill it.  I’m not sure why I love it so much.  Pretty sure it’s older than my kids. 





Fill the blender 2/3 full with oats—original or quick, doesn’t matter.




Blend on low for 30 seconds or until all of the oats rotate through and they become a flour consistency.  




That’s it! {wink}

Lucky Charms Treats


Want an easy peasy St. Patrick's Day goodie?  These fun and festive sticky delights are the perfect choice.

Prepared in the same way as crispy rice treats, these green shamrock treats are a snap to make and will make anyone lucky--even those who aren't Irish!



Ingredients:
7 cups Lucky Charms cereal
1 bag Marshmallows (approx. 40)
3 tablespoons Butter

Directions:
Melt butter and marshmallows in large pot on very low heat
Add Lucky Charms
Stir until coated
Press hot mixture into a greased 9 x 13" pan
Let cool and cut
